Vegan Tortilla Soup

Even though tortilla chips are usually used in and on top of tortilla soup my vegan tortilla soup called for homemade oil-free tortilla strips.

Drain and wring out excess water. To begin I used white corn tortillas and using a pizza cutter I cut the tortilla into strips. Let simmer for about 15-20 minutes.
Simmer uncovered until quinoa is tender about 10 minutes. You can easily make this vegan tortilla soup in one pot on the stovetop. Saute In a skillet saute a drop of oil with the carrots onions and celery until translucent.
Add beans tomatoes corn and cilantro. Next add the diced tomatoes tomato paste all condiments the vegetable broth and plant-based milk. Stir in the pepper and onion stir fry mix garlic and cumin and cook 5 minutes until vegetables are tender.
